Aletheia Espy: An Aspiring Entrepreneur and College Student
Growing up in a health-conscious household has fundamentally shaped who I am today. This foundation has deepened my passion for healthy living as I’ve witnessed its transformative impact throughout every season of my life. I’m dedicated to fitness, committed to my faith as a follower of Jesus, and find joy in my love for dogs and horses.
Diving Deeper into my Story
My relationship with food has been shaped by health necessities and unexpected challenges. During childhood, I developed a gluten sensitivity and avoided dairy due to seasonal allergies. A year ago, a serious horseback riding accident and concussion required me to eliminate gluten entirely and adopt a ketogenic diet—a difficult but necessary transition.
Three months after my accident, I moved away from the strict keto diet as I continued to recover. I’ve gradually reintroduced foods while maintaining a high-protein, well-balanced approach. Today, I’m selective about gluten, choosing quality sources or enjoying it while traveling in Europe.
This personal journey through dietary challenges and recovery has inspired me to share my experiences through this blog. I hope my story resonates with others navigating similar paths.
